Apple Cheesecake Bars with Caramel Sauce

Apple cheesecake bars I also made another version with no cheesecake so try these Caramel Apple Pie Bars with Pretzel Crust as well. When I found this recipe, I knew I had to try it (with a few little changes). I thought these tasted better a day later when the cheesecake part had a chance to really set and take on a little of the other flavors.

Crust
  1. Preheat oven to 350 F. In a medium bowl, combine the flour, brown sugar and the butter with a pastry blender until it's crumbly. Line a 13"x9" pan with two, crossing sheets of parchment paper. This will make it easier to remove from the pan later. Press the crust into the bottom of the pan and then bake for 15 minutes until it starts to brown a little.

  1. In a mixing bowl, beat the cream cheese with the sugar until smooth. Add the eggs, one at a time and then add the vanilla extract. Pour the cream cheese mixture over the warm crust.

  1. In a medium bowl, stir together the chopped apples, brown sugar, cinnamon, nutmeg and ginger.

  2. Spread the apples evenly over the cheesecake layer.

  1. In a small bowl, mix together all the Streusel ingredients until well combined. Top the apple layer with the Streusel.

  2. Bake for around 45 minutes.

  3. Let it completely cool then refrigerate for a few hours before cutting. When it's well chilled, remove from the pan by lifting out the parchment paper. Cut into 16 pieces. Place each piece into a cupcake paper and then drizzle the caramel sauce over the top of each piece. Store in the refrigerator.
