Almond Apricot Baked Brie

Baked Brie is one of my favorite appetizers to make. There are lots of combinations of preserves and nuts that taste great with Brie. I used apricot preserves and almond slices for this one. The almond slices on the inside are toasted but the ones on top should be raw so that they don’t get over browned when the Brie is baked.

For the smaller 5-6″ Brie wheel that I used here, a small ceramic tart baking dish works out great for both baking and serving.

Almond Apricot Baked Brie

  1. Preheat oven to 350 F. Unwrap the Brie wheel.

  2. Cut off the top of the Brie and then place it into a baking/serving pan that has been coated with non-stick spray.

  3. Top the Brie with the apricot preserves.

  4. Toast the almond slices in a dry frying pan over medium-high heat. Stir until lightly browned.

  5. Add the toasted almond slices over the apricot preserves.

  6. Place the pie dough over the top and trim to the edge of the baking dish.

  7. Whisk the egg yolk in a small dish. Brush the pie crust with the egg yolk.

  8. Top the dough with a tablespoon of raw almond slices.

  9. Bake in 350 F oven for around 30 minutes or until the crust is lightly browned. Serve with crackers or bread.
