Tomato & Olive Goat Cheese Spread

Serve this hot Tomato and Olive Goat Cheese Spread with some crusty bread slices. You could also spread it onto the bread slices and serve it that way. You can purchase or make the pesto- here’s my pesto recipe. Make sure your serving dish has sides high enough to hold the tomato mix. I used an 8″ ceramic quiche dish.

We tossed the leftovers with pasta the next night and that came really good, too.

Instructions
  1. Slice your tomatoes into quarters and add them to a medium mixing bowl. Slice the olives in quarters and add them to the tomatoes.

  2. Toss the pesto with the tomatoes and olives.

  4. Chop up the fresh basil.

  5. Add the basil to the tomato mix.

  6. Preheat oven to 375F. Place th goat cheese in the center of a baking dish. The dish should have at least one inch sides to hold the tomato mix.

  7. Pour the tomato mix over the goat cheese.

  8. Bake uncovered for around 30 minutes.

  9. Serve hot with some crusty bread.
