Spicy Edamame and Corn Salad

Instructions
  1. Cook the edamame according to package directions. Add the cooked edamame to a large mixing bowl.

  2. Cook the corn according to package directions and then add to the edamame.

  3. Mix them together and then set aside.

  4. Mix together all the Spicy Soy Sauce ingredients.

  5. Add them to a small sauce pot. Bring to a boil, stirring often. Lower heat to bring to a simmer and continue to cook and stir for a few minutes until the sauce starts to slightly thicken.

  6. Toss the corn and edamame with the Spicy Soy Sauce. Let it sit for few minutes and toss it again. Add to your serving dish. This salad can also be refrigerated at this point and served as a cold salad. Mix right before serving.
