Creamy Ricotta Broccoli Soup

BROCCOLISOUPMy family grew up eating Creamy Ricotta Broccoli Soup- my mom made it, my grandmother made it and now I make it for my daughter. It’s easy and inexpensive to make plus it’s packed with nutrients. You can add pasta or rice to the soup or serve as a side dish with a sandwich.

For the soup shown here, I used an emulsion blender to cream the soup but we often make this leaving the broccoli pieces whole.

Instructions
  1. Cut up and rinse a large bunch of fresh broccoli.

  2. Chop the onion and mince the garlic.

  3. In a large, heavy sauce pot, add the olive oil, onions and garlic. Saute over medium heat until the onions are lightly browned.

  4. Add the chicken broth to the sauce pot.

  6. Add the chopped broccoli. Add just enough additional water to cover the broccoli.

  7. Bring to a boil then turn down the heat to a low simmer. Cover and continue to cook for about 2 more hours until the broccoli is falling apart.

  8. Use an emulsion blender to break up the broccoli. Add the garlic powder and salt and pepper to taste. Remove from the heat and add the ricotta cheese.

  9. Optional: add pasta to the broccoli soup. Cook the pasta in water according to package directions. Add the cooked pasta to the broccoli soup. Serve.
