Beef Fajitas with Grilled Peppers and Onions

You can use flour or corn tortillas. If you’ve never tried cooking the uncooked flour tortillas, they taste a lot better than ready made ones and can be purchased at most food stores in the refrigerator section. Put a dry frying pan on medium-high heat and then add an uncooked tortilla. As soon as it starts to puff up, turn it over. They take about 30 seconds to cook.

  1. Clean and then slice up the red bell peppers. Add them to a medium bowl.

  2. Slice up the onions.

  3. Add them to the same bowl as the peppers.

  4. Clean the baby bella mushrooms. Slice each mushroom into 3-4 slices.

  5. Add the mushrooms to the peppers and onions. Drizzle with olive oil. Add salt, pepper and garlic powder. Mix together and then set aside.

  6. If your meat is already seasoned, then just place it onto a dish and leave out for about 20 minutes prior to grilling. If it's not pre-seasoned, drizzle with olive oil and sprinkle with fajita seasoning.

  7. Preheat the grill then turn it down to a medium heat. For grilling the vegetables and meat, place a large sheet of heavy duty foil on the hot grill. Spray with non-stick spray. Add the bowl of vegetables onto the foil. Stir occasionally.

  8. Once the vegetables start to brown and are almost cooked, move the vegetables to one side of the grill and then add the meat. The meat will cook quickly so stir often and remove the meat once it's browned. If you like your beef well done, leave it on a little longer.

  9. Add the cooked vegetable and beef to your serving bowl.

  10. Dice up the tomatoes, chop the cilantro, slice the limes and place out the sour cream, cheddar cheese and tortillas.

  11. Serve the fajitas.
