Banana Nut Muffins

These Banana Nut Muffins are a quick variation on banana bread,  I used a spice cake mix as the base which pairs really well with the bananas. I added nuts to them but that is optional.

These would also taste yummy with some chocolate chips added or crumb cake topping.

I made some boxes of muffins for my daughters teachers including these Banana Nut Muffins, Toffee Double Chocolate Muffins and Lemon Blueberry Muffins.

Banana Nut Muffins

Instructions
  1. Preheat oven to 350F. In a medium bowl, using a fork or a pastry cutter, smash up the bananas.

  2. Set the bananas aside.

  3. In a large mixing bowl, add all the ingredients except the bananas and nuts.

  4. Mix on medium speed for about 2 minutes.

  5. Add the bananas and mix for another 30 seconds.

  6. On a cutting board, chop the walnuts.

  7. Add the nuts to the cake mixture .

  8. Mix for a few seconds on low speed.

  9. Line two cupcake pans with paper cupcake liners.

  10. Fill with cake batter about 2/3 full. Top each cupcake with one or two large pieces of walnut.

  11. Bake for about 28-30 minutes in 350F oven. Let them cool and then serve.
