Caramel Apple Pie Bars with Pretzel Crust

apple-pretzel-barsThe pretzel crust on these caramel apple bars give them a nice crunch. A little salty base with a sweet caramel sauce on top. I love apple treats in the fall and these bars are an easy way to share sweet treats with friends.

I used a purchased caramel sauce but here is a homemade caramel sauce recipe, if you prefer to make it yourself.

Instructions
  1. Preheat oven to 300 F. Line the bottom of a 13 "x 9" baking pan with parchment paper so that there is extra parchment on all four sides. This will make it easier to remove from the pan once they are cooked and easier to cut them into bars.
Pretzel Crust
  1. Add the pretzels to a food processor and pulse to chop the pretzels without making the pieces too small. Combine the pretzels and flour into a mixing bowl and stir until combined.
  2. In a medium bowl, stir together the melted butter, sugar and vanilla. Add the flour/pretzel mix and stir until completely combined. Pour onto the parchment lined baking pan and spread evenly over the bottom. Bake for around 12 minutes to set the crust. Increase oven temperature to 350 F.
Apple Filling
  1. Combine the diced up apples, cinnamon, nutmeg, sugar and flour. Pour onto warm crust.
Streusel Topping
  1. Mix together oats, brown sugar, cinnamon, flour and pecans (optional). Using a pastry blender, mix in the cold butter. Sprinkle the topping mixture over the apples.
  2. Bake in 350 F over for around 45 minutes or until golden brown.
  3. Let it completely cool. Lift the two sides of the parchment paper to remove from the baking pan. Cut into 16 pieces. I like to put each individual bar into a cupcake tin. It makes serving easier.
  4. Drizzle each of the bars with caramel sauce. Serve.
