Chicken Tamale Bake

This Chicken Tamale Bake is so tasty and easy to make. I used red enchilada sauce but green chili  enchilada sauce would be really good as well. The three chicken breasts make twice as much chicken as you need so you can easily double this recipe by just doubling the cornbread mix and baking in a 9″ x14″ baking dish instead.

The pulled chicken cooks in a crock pot for about 4 hours so you should start the cornbread about 45 minutes before the chicken is done.

Chicken Tamale Bake

  1. To make the pulled chicken, spray a crock pot baking dish with non-stick spray and add 3 large chicken breasts. This will be more chicken then you need to make a 9"x9" baking pan but you can make street tacos or even sandwiches with the extra. Or, freeze it to make a corn tamale bake another day.

  2. Pour the can of enchilada sauce over the chicken. I used red sauce but green enchilada sauce would be really good as well.

  3. Top with diced green chilies.

  4. Cover the crock pot and cook the chicken on high for 4 to 4 1/2 hours.

  6. When you are able to pull the chicken apart with a fork, it's cooked. Remove the chicken and shred it using two forks. Leave the sauce in the crock pot.

Cornbread
  1. You should start the cornbread about 45 minutes before the chicken is done. Add the cornbread mix to a medium mixing bowl.

  2. Add the egg and milk.

  4. Stir until all the ingredients are combined.

  5. Grease a 9" x 9" baking dish. Add the cornbread mix.

  6. Make sure that you don't add too much cornbread mix to the pan. When it's cooked, there needs to be enough room on top to add the chicken and sauce.

  7. Bake in a 400F oven for about 20 minutes.
Chicken Tamale Bake
  1. Place the cornbread pan over a larger baking pan to catch any sauce that boils over. Add some shredded chicken over the top of the cornbread. You will have more chicken then what you need for this dish so don't try to add it all.

  2. Pour enchilada sauce from the crock pot over the chicken.

  3. Cover with shredded cheddar cheese.

  4. Bake for about another 20 minutes at 400F until the cheese is melted and the sauce starts to boil along the edges.

  5. Serve with some sour cream and chopped green onions.
