Chocolate Peanut Butter Granola Bars

These no-bake Chocolate Peanut Butter Granola Bars are a great summer snack and put together two of my favorite things – chocolate and peanut butter. I made with half old-fashioned oats and half granola. The granola added some crunchiness to them but you could make them with all oats (or all granola).

The bars don’t take long to prepare but then you need to chill for at least 4 hours to let them set.

Chocolate Peanut Butter Granola Bars

  1. In a medium sauce pan, add the butter, brown sugar and vanilla.

  2. Cook over medium heat. Stir until everything is melted and combined.

  3. Continue to cook at a low boil for an additional 5 minutes.

  4. While the butter mixture is simmering, combine the oats, granola, cinnamon and salt in a bowl.

  5. Take the butter mixture off the stove and stir into the oat mixture.

  6. Line the bottom of an 8x8 or 9x9 baking pan with parchment paper.

  7. Pour half the mixture into the pan.

  8. In a small sauce pan over low heat, add the chocolate and peanut butter.

  9. Stir until combined.

  11. Pour the chocolate peanut butter over the oats.

  13. Top with the second half of the oat mixture. Refrigerate for at least 4 hours.

  14. Cut in 4 rows in one direction and 8 rows in the other direction. Store in the refrigerator.
