Dark Chocolate Coconut Brownie Bites have a chewy brownie bottom with creamy coconut and dark chocolate ganache on top.

The coconut cream tastes great with the dark chocolate ganache and the brownie bottom. I cut these into small brownie bites because they are very rich. Instructions
Brownies:
  1. Line a 9x9 baking pan with foil. The foil should come over the edges by a few inches on two sides so that you can use this to pull the brownies out of the pan later. Spray well with non-stick spray. Make the brownie mix according to the box instructions. Allow the pan of brownies to cool before topping with the coconut.

  7. Make the coconut cream: In a large mixing bowl, add the cream cheese., heavy cream, powdered sugar and vanilla. Mix for 3-4 minutes until it's light and fluffy. Add the coconut and continue to mix on low for another minute.

  10. Spread the coconut cream over the cooled brownies.

Dark Chocolate Ganache
  1. In a small sauce pan over low heat, add the chocolate and heavy cream. Stir until all the chocolate is melted and combined. Let the chocolate cool in the sauce pan for about 5 minutes.

  4. Pour the chocolate ganache over the coconut cream. Spread evenly. Top with coconut. Refrigerate for at least 4 hours. Overnight is better. When it's well chilled, using the foil, pull the brownies out of the pan onto a cutting board. Peel the foil away from the edges. Using a large knife or a metal scraper, cut the brownies into 8 rows and 8 columns. If you want larger servings, you can cut 6 x 6 instead. Serve or refrigerate.
