Fat Free Mixed Berry Ice Cream

We are always looking for some easy, healthy dessert options. This Fat Free Mixed Berry Ice Cream is easy to make and you can use a variety of in-season fruit. I made this one with a mixture of strawberries, blueberries and raspberries. Chop some extra fruit to top the ice cream. You can also try some add-ins like sliced almonds, a little shredded coconut or even a little chopped dark chocolate.

You want to take the container out of the freezer about 10-15 minutes before you serve to make it easier to scoop.

Ingredients
  • 1 8 oz. container fat free whip topping defrosted in the refrigerator
  • 1 cup berries I mixed blueberries, strawberries and raspberries but you can use all of one kind
Optional:
  • 1 tsp sugar or honey if your berries aren't too sweet, you can add some sugar or honey to sweeten them
  • 1/2 cup chopped berries Serve some fresh fruit with the ice cream

Instructions
  1. Add the defrosted whip topping to a mixing bowl.
  2. Add the berries to a food processor.

  3. Pulse until it's mostly chopped.- it doesn't need to be pureed. If you are adding a sweetener, add it now.

  4. Fold the fruit into the whip topping gently.

  5. There can be areas with more fruit- don't over mix.

  6. Pour the fruit back into the whip topping container. Freeze for at least 3 hours before serving.

  7. Take it out of the freezer about 10 minutes before serving to allow it to slightly defrost to make serving easier. Optional: serve the ice cream with some chopped, fresh fruit.
