Peppermint Dark Chocolate Brownie Bites

Peppermint Dark Chocolate Brownie Bites have a chewy brownie bottom with a creamy peppermint and dark chocolate ganache on top.

Instructions
Brownies:
  1. Line a 9x9 baking pan with foil. The foil should come over the edges by a few inches on two sides so that you can use this to pull the brownies out of the pan later. Spray well with non-stick spray. Make the brownie mix according to the box instructions. Allow the pan of brownies to cool before topping with the peppermint cream.

  7. Make the peppermint cream. In a large mixing bowl, add the softened butter and whip for about 3 minutes until it's light and fluffy. Add 2 tablespoons of the heavy cream and the peppermint oil. Continue to mix for a few minutes until it's well combined. Add the powdered sugar. If it's needed, add more heavy cream. Continue to mix until the peppermint cream is fluffy.

  8. Spread the peppermint cream over the pan of cooled brownies.

Chocolate Ganache
  1. In a small sauce pan over low heat, add the chocolate and heavy cream. Stir until all the chocolate is melted and combined. Let the chocolate cool in the sauce pan for about 5 minutes.

  4. Pour the chocolate ganache over the peppermint cream. Spread evenly. Refrigerate for at least 4 hours. Overnight is better. When it's well chilled, using the foil, pull the brownies out of the pan, onto a cutting board. Peel the foil away from the edges. Using a large knife or a metal scraper, cut the brownies into 8 rows and 8 columns. If you want larger servings, you can cut 6 x 6 instead. Serve or refrigerate.
