Roasted Peppers Baked Brie is a tasty appetizer. Take it out of the oven as your guests are arriving. Be sure to serve hot with some crusty bread or crackers.
When you buy Brie, there are double and triple cream varieties. The triple cream has a higher cream content so it is creamier than other varieties.

To roast the peppers, place them on top of a hot grill. Turn every few minutes until all the sides are blackened. Add the roasted peppers to a dish and cover with plastic wrap. Set them aside for an hour or two. Once they're cooled, the skin will easily peel off the peppers.
If you're using jarred roasted peppers, add them to a plate.
Slice the peppers. Add them to a bowl.
Chop the basil and add it to the peppers.
Add the olive oil, garlic powder, salt and pepper.
Mix the peppers and set aside until your ready to bake the brie.
Preheat the oven to 375F. Spray a quiche dish with non-stick spray. Add the brie to the center of the quiche dish. Make sure that it is a large enough dish to leave around an inch or two around the brie.
Add the roasted peppers on top of the brie.
Bake for 30 minutes. Serve with sliced, crusty bread.
