I love making pesto sauce. Sundried Tomato Pesto is yet another yummy option to make with pasta, use on pizza, saute with vegetables and more. The sundried tomatoes have a tangy, tomato taste. If you like spicy, just add some flaked red pepper while processing.

Sundried Tomato Pesto

Instructions
  1. In a food processor, add the sundried tomatoes packed in oil.

  2. Add basil, shallot and garlic.

  5. Add the toasted nuts. You can use sliced almonds, pine nuts or walnuts. Pecans have a stronger taste so they wouldn't be my first choice.

  6. Add the olive oil, tomato paste and balsamic vinegar.

  8. Add the oregano, salt and pepper then process together for a minute.

  9. Add the cheese and lemon juice then continue to process for another minute or two.

  10. You can make the pesto a few days ahead of time or even freeze for future use.
