Triple Chip Pumpkin Cookies

My favorite part of fall is all the pumpkin treats to make. These Triple Chip Pumpkin Cookies have a bit of a cake texture and all the different chips make a yummy sweet treat. I also love nuts – pecans make a great addition to these cookies. Next time I make these, I’m going to try some coconut flakes in here as well.

Be sure to use pumpkin puree and not pie mix. I had a large can of puree so I froze the extra two cups to use for another pumpkin treat.

Triple Chip Pumpkin Cookies

Instructions
  1. In a large mixing bowl, add the pumpkin puree.

  2. Add sugar.

  3. Add brown sugar.

  5. Add egg and vanilla extract.

  6. Mix all the ingredients until well blended.

  7. Add the cinnamon, ginger, allspice, nutmeg, baking soda and salt.

  8. Add the flour.

  9. Mix ingredients until combined.

  10. Add the milk chocolate chips, white chocolate chips and cinnamon chips. If you're adding nuts, add them here.

  11. Mix just enough to combine the chips. The dough will be soft. Refrigerate for 1 hour.

  12. Preheat oven to 350F. On parchment lined cookie sheets, spoon 1 tbsp of cookie dough into mounds. Bake for 12 minutes.

  13. Let them cool for about 5 minutes on the cookie sheet then move them over to fully cool on some wax paper.
